Single Serving Granola Bar

I love granola bars and they are so easy to make. Finding healthy options in the grocery store can be hard. High fructose corn syrup, artificial colors and flavors are in almost all foods these days. The best way to eat and stay healthy is to make your own food. You will consume less chemicals and preservatives. Now I am not a big fan of cooking but some things are just so easy to make. Granola bars are on my list of easy healthy recipes to make that everybody seems to love. I recently hosted a workshop on making granola bars and how you can make them even healthier by adding nutrient dense ingredients. They make a great snack to take with you or even make them part of your breakfast.

These recipes yield about 2 servings

Old Fashion Oats Granola Bar recipe

  • 4 tablespoons of oats
  • 1 tablespoon of peanut butter
  • 1/2 tablespoon of honey or Agave
  • add any other ingredients 1 teaspoon at time (chocolate chips, nuts, dried fruit etc..)

* You can substitute oats for Rice Krispies

Instant Oatmeal Packet Granola Bar recipe

  • 1 packet of instant oatmeal (flavor of choice, I like apple cinnamon)
  • 1 1/2 tablespoons of peanut butter
  • 1/2 teaspoon of honey or agave
  • add other ingredients 1 teaspoon at a time (chocolate chips, nuts, dried fruit etc..)

Directions for both recipes

Mix all ingredients together to get evenly coated. Add extra ingredients a little at a time, you may have to add more peanut butter and honey if you want a lot of other ingredients. If it is not sticky enough you can add more peanut butter. To make mixing easier warm up the peanut butter for a few seconds. What is great about this recipe is that none of the measurements have to be exact, just add the ingredients you like as long as the oats, peanut butter and honey or agave is used it will taste great.

Mash all ingredients in a container and cover with plastic wrap and place in the freezer for a couple of hours. The key to the bars sticking together is to really mash the ingredients down with a hard object like the back of a spoon or use your hand to get it really flat. Cut the granola once frozen and hard then wrap individual pieces in plastic wrap until ready to eat.

Extra ingredients to add in dried cranberries and blueberries, flaxseeds, chia seeds, quinoa, chocolate chips and nuts.
